Chicken meat is easy to digest and has an extremely beneficial nutritional composition. It is low-fat while, at the same time, rich in protein. Swiss chickens are available in three weight classes: “normal” chickens (up to 1.2 kg), “Mistkratzerli” (spring chickens; up to approx. 600 g) and the somewhat larger poulards (up to 1.8 kg). Fresh poultry meat is firm and has an even, light colour.
